I love good food, I love good food, I love good food!
Food has never controlled my life but food plays an important role in my life. Initially living in Nicaragua posed it's challenges in finding key ingredients necessary to maintaining a healthy lifestyle but that changed very quickly as I educated myself on what was available in the local markets and nearby farms. It wasn't long before discovering that Nicaragua is one of the best place on earth to indulge in nature's finest super-food organic products if you are willing to take the time to educate yourself and go seeking.
The word diet scares me, personally I don't have the will power to say no to things I love. Having a healthy lifestyle dictates my choices when it comes to meal preparation and I consider myself a flex-itarian. I eat what I want when I want under the condition it will make me feel good on the inside and won't harm others or have a drastic negative impact on the planet. It is my life purpose to inspire you to live a healthy lifestyle. May you indulge in the richness of what your heart is seeking to determine what the necessary key ingredients are in creating the perfect balance within your own body.
Avocado Key Lime Pie Vegan and Raw
2 Cups almonds, walnuts, cashews, chopped fine
6 -8 dried dates chopped fine
1/4 c. raisins
1/4 C. coconut oil
1/4 C. dried oats
You can substitute any dried nuts or fruits, you want the crust to have moisture so it's easy to press into your pie plate. Be creative here. You can also use dried cranberries, blueberries or chia seeds for different texture.
Mix in food processor, Vitamix or by hand and press into a pie plate (I used my vitamix and pressed into a rectangular glass dish)
juice of 4 or 5 limes ( depends how juicy they are and how tangy you want the filling to be)
1/2 Cup sticky raw organic honey (the thicker the better)
blend in a blender or Vitamix, fill the crust
1 cup of dried coconut flakes
1 teaspoon lime or lemon juice
2 zested limes
FREEZE for 1 hour or longer. Slice and enjoy.
* Nicaragua produces some very large avocados so my filling made extra. Before I added the lime I put the avocados and honey into my Vitamix making a large amount of filling so I divided it in half to make a second dessert and added the lime to one half in the end mixing it by hand in a bowl. FOR THE SECOND DESSERT I added 10 raw cacao beans, 3 TBS. unsweetened coco powder, 1/2 cup dried coconut flakes, 1 TBS vanilla and blended in the Vitamix. I also made a second crust with a view variations by adding crushed raw cacao to the crust mixture. I topped this delicious dessert with organic dark sweet chocolate (chopped finely) and dried coco flakes.
Because this desert is not baked, you can be creative with your ingredients.
The best part about this recipe is that you or your loved ones don't have to like avocado, these recipes completely fooled my boyfriend who dislikes avocado.
